Twin Falls’ Koto Brewing Co. explores the aromatic depth of IPAs

When it comes to beer in the Magic Valley, Koto Brewing Co. is the place to be. 

From porters to blondes, IPAs to cream ales, Koto covers the gamut of flavor preferences. 

But for head brewer Pierre Tusow, nothing beats the 2nd Base IPA. 2nd Base is a double dry-hopped version of the Table Base IPA, one of Koto’s most popular beers. 

“It’s the aromatics,” he said. 

A common misconception among novice beer drinkers is that IPA equates to bitterness. That’s a perception Tusow is hoping to shift.

“Reality is a lot of new IPAs—including what we focus on—is aromatics over bitterness,” he said. 

Tusow is always looking for ways to improve his skills. He regularly attends brewing conventions to learn about new techniques and products in the brewing industry. 

Because of this, Koto beers tend to have a more distinguished flavor than other products on the market.

“We focus on the innovation of the craft,” Tusow said. “We’re always implementing new hop technologies.”

Koto Brewing Co. opened its doors in December 2018, but the origins of the brewery began many years before that. 

“This all started with a love of beer,” owner Shane Cook said.

When Cook was 21 years old and living in Salt Lake City, he struggled to find a selection of quality beer. Between alcohol restrictions and a lack of local breweries, his options were limited. 

So, Cook did the only thing a rational ale aficionado in that situation could do: he started brewing his own beer at home.  

Eventually he moved to Twin Falls and opened the Twin Falls Sandwich Co., where he met Tusow. 

“We started talking and one thing led to another,” Cook said. 

Now, 15 years after moving to the Gem State, Koto beers can be found in restaurants, supermarkets and gas stations across the Magic Valley.

But Koto is more than just beer. 

The brewery also serves a full menu of Asian fusion cuisine with plenty of vegetarian and gluten-free options. Those not interested in beer can order off of the extensive wine list. 

Live performances and events, from musicians to comedians and even beer yoga, are hosted on site. 

“We try to schedule something every weekend,” Cook said. 

Throughout the week there aren’t as many performances going on, but there are still deals to be found. Every Tuesday is Koto Pride Day. Patrons wearing Koto apparel will receive a 10% discount on their tab. 

Mondays are ladies’ night, a common practice among bars and breweries, but Cook didn’t want to alienate the other half of the community.

“What about the guys,” he said. “Don’t we deserve a night?”

Cook’s conclusion was yes, they certainly do.

That is why men can enjoy $2 off pints and appetizers on Thursdays as they celebrate “Guys Night.”
